Description
Duties/Responsibilities:
- Managing inventory so that all necessary ingredients are stocked for service
- Manage the walk-in cooler layout and organization
- Hiring new staff and providing training and orientation to facilitate quick acclimation
- Streamlining the kitchen processes to maintain prompt service times
- Working with the Head Chef to develop and maintain the restaurant menu
- Setting regular cleaning standards for the kitchen and verifying that staff is maintaining sanitation levels
- Creating schedules for all kitchen staff
- Tracking kitchen to identify areas of potential waste
- Ensures products are stored at the correct temperatures and the recipe books are up to date with current menu items, portions, and ingredients.
- Ensures utilization of daily prep sheets and meat/fish yield sheets daily and that product counts are recorded accurately daily. Participates in monthly inventory process.
- Anticipates, identifies, and corrects any issues with inventory, systems, and staffing.
- Preparing for next day Daily specials
- Imenu Pro for daily specials, supervise all station and make sure mis en place is all set to go
- Daily reporting
- Scheduling kitchen staff shifts
- Maintaining health and safety standards
- Resolved food quality issues
- Taking charge of kitchen opening, closing and other side duties as directed by the Executive Chef
- Monitor grounds of delivery and garbage area
- Keep accurate vendor logs with orders and receivables
- Coordinate the private party in house

Physical Requirements:
- Must be able to lift up to 15 pounds at times.
